This is wonderful thing to do with your children. My children and I have been canning together for years. It’s something my grandmother did with me when I was a child.
Jalapeño peach jelly
4-5 ripe peaches (you can even use canned peaches if need be but must drain the liquid)
1 cup apple cider vinegar
3-4 jalapeños (finely chopped)
5 cups of sugar
1/2 packet of liquid fruit pectin
1. In a large sauce pan use a potato masher to mash the peaches down. Next add apple cider vinegar and jalapeños and bring to a boil. After mixture comes to a boil reduce heat to a rolling boil and cook for about 15-20 minutes stirring occasionally to keep mixture from sticking to the pot.
2. Add 5 cups of sugar and stir constantly. Let it boil for approximately 3 minutes or until the sugar looks to be completely dissolved.
3. Next add in a little under a 1/2 packet (which looks to be 2 tbl spoons). Continue to stir constantly for another 2 minutes and remove from heat.
4. Let the mixture sit for 5 minutes transfer into a cheesecloth (I’ve heard some people use pantyhose) and squeeze out the jelly into a bowl (I usually add a couple of tsps of the jalapeños and peaches to the jelly). Next ladle it into a jar (or plastic container for freezer) to store in the the refrigerator.
